Fairmont Adds a New Countryside Luxury Option Near Manchester
The 116-room countryside resort opens July 10 with a Gordon Ramsay restaurant, Fairmont Spa, and a championship golf course.

Fairmont is expanding its U.K. footprint with the opening of Fairmont Cheshire, The Mere on July 10, bringing one of luxury hospitality’s most recognizable brands to Northwest England for the first time.
Located on a 157-acre estate outside Knutsford, the hotel occupies the former Mere Golf Resort & Spa, which has undergone a major transformation following a 35 million-pound acquisition and a reported 90 million-pound redevelopment by Select Group. The opening adds a significant new luxury option in a region that has traditionally lacked the concentration of internationally branded luxury hotels found in London, Scotland, and the South East.

The property features 116 guestrooms, including 23 suites, overlooking The Mere Lake and the surrounding Cheshire countryside. Advisors with clients seeking a countryside retreat within easy reach of Manchester may find the hotel particularly appealing, as it combines a resort-style experience with strong wellness, dining, and event offerings.
Food and beverage will play a central role in the guest experience. The headline venue is Gordon Ramsay at The Mere, joined by several additional concepts, including The Orangery for afternoon tea and Champagne, The Club Lounge, which will serve both British and Indian cuisine, and a dedicated Spa Bar.
Wellness facilities include the new Fairmont Spa, while golfers have access to the estate’s 18-hole championship course. The combination positions the property as a destination for both leisure travelers and celebratory occasions, from golf getaways and wellness-focused escapes to multi-generational family trips.

Meetings and events are expected to be another major focus. The hotel’s 10,000-square-foot Grand Ballroom can accommodate up to 1,000 guests, along with four boardrooms overlooking the estate.
The opening also represents a new chapter for a site with a long history: references to The Mere date back to the Domesday Book of 1086, and the estate has evolved over centuries from a historic country property into a leisure destination and, finally, a luxury hotel.
